As we approach peak strawberry season, nothing beats the fresh sweet taste of Strawberry Cream Cheese frosting.  This recipe is sure to WOW and is the perfect topper for any cupcake or cake.  

 

Ingredients:

1 cup fresh strawberries (make sure you remove the green steam and cut into bit size pieces)

1 tablespoon of granulated sugar

8 tablespoons of unsalted butter (make sure your butter is at room temperature)

1 brick of regular plain cream cheese

1 teaspoon of vanilla extract

2 ½ cups of powdered sugar

 

Directions:

  1. First you will need to cook your strawberries. In a small saucepan, add your cut strawberries, sugar and small splash of water.  Turn heat to medium and stir every few mins.   You will want to ensure the strawberries are fully reduced – this should take 30 mins.  Keep checking them to ensure you don’t burn them.   You want to make sure it is thick like jam…if needed you can add small amounts of water to help reduce them down.   Once cooked pour into bowl and set aside to cool.

 

  1. In a separate bowl, beat together cream cheese, butter and vanilla until you have a nice creamy consistency using a hand mixer (or electric mixer if you have it).  Once strawberries are cooled, slowly add in your strawberry mixture, and mix together on low speed.  Slowly add in powdered sugar, until smooth.

 

 

Your frosting is now ready to top off your favouruite cupcake or cake!      Note: If you aren’t ready to use your frosting right away, you can store in am air tight storage baggie and freeze for up to 3 months.
